Physico-Chemical and Antioxidative Properties of Whey Protein Beverages
Abstract: Whey, the liquid left after milk casein precipitation, was utilized, and its physicochemical properties were assessed. The aim of the research was to analyze the availability of nutrients in whey by preparing a modified whey protein beverage. Natural and artificial whey protein beverages were prepared. We studied the shelf life of these beverages over a period of 0 to 11 days and compared them based on their acidity, viscosity, pH, …

Utilization of Whey in Functional Dairy Beverages: Nutritional, Technological, and Industrial Perspectives
Abstract: The dairy industry plays a vital role in global nutrition and the economy, producing a wide range of products that contribute significantly to human health. Among its by-products, whey is generated in large quantities during cheese and paneer production and has traditionally been considered a waste material, posing environmental challenges due to its high biochemical oxygen demand. However, in recent years, whey has gained considerable attention as a valuable resource …

Development of Shelf-stable Oral Rehydration Drink with Whey and Red seaweed (Kappaphycus alvarezii)
Abstract: The present study aimed at developing a whey based oral rehydration drink (ORD) incorporated with red seaweed. The ORD was formulated with seaweed, sodium chloride, potassium chloride and sugar at the concentrations of 1.0 w/v%, 0.20 w/v%, 0.075 w/v% and 15 w/v% respectively and a whey:water ratio of 1:1.5. The ORD with 1.0 w/v% seaweed obtained the highest overall sensorial acceptability. This drink was further subjected to storage study for …

Formulation and development of Lamivudine Nanoemulsion by using Emulsifying Polymers and It’s Evaluation
Abstract: Nanoemulsion is a novel approach to medicine delivery that helps to increase the bioavailability of drugs that aren’t particularly soluble in water. In this research work, nanoemulsion of Lamivudine was formulated by using polymers such as SPAN 80, TWEEN 80 and Whey protein concentrate with the help of Ultrasonication technology. The formulation was optimized. It was evaluated by assessing pH, viscosity, turbidity, in vitro franz diffusion study, particle size distribution, …

Casein - A Unique Milk Protein
Abstract: Milk is a nutrient-rich food that contains proteins, fats, lactose, vitamins, minerals, enzymes, and other organic compounds. Essential for young mammals, milk proteins provide amino acids, nitrogen, and minerals necessary for muscle and tissue development. In human nutrition, milk is valued for its digestibility and as a source of calcium and phosphorus, crucial for infant growth. Milk proteins are classified into two primary types: caseins, which make up 75–80% of …

Exploring Lactic Acid Bacteria in Nasiriyah’s Locally Manufactured Cheese
Abstract: This investigation aimed to identify and diagnose lactic acid bacteria in locally produced cheese. Forty-eight isolates were obtained by categorizing them according to their phenotypic and microscopic features. After conducting biochemical tests, we acquired ten bacterial isolates from the Lactobacillus species. The VITEK 2 instrument was utilized to distinguish the samples to the species level with a threshold for the Lactobacillus genus. In the city of Nasiriyah, visiting the various …

Cow’s Milk Allergy: Prevalence, Diagnosis, and Alternative Formulations
Abstract: Cow’s Milk Allergy (CMA) occurs when the immune system reacts to proteins in cow’s milk, like casein and whey. In individuals with CMA, the immune system wrongly perceives these proteins as threats, causing allergic reactions when cow’s milk is consumed. Unlike lactose intolerance, which results from the body’s inability to digest lactose – a sugar in milk – due to a deficiency of the enzyme lactase, CMA is an immune …
