Effect of Sodium Caseinate Hydrolysate-Zinc Complex on the Quality Characteristics of Cupcake
Abstract: Casein hydrolysates (CNH)-mineral complexes are a promising strategy for enhancement of mineral absorption and reduction of mineral deficiency. In the present research, an attempt was made to develop CNH-Zn complex incorporated cupcake and in-vitro bioavailability of the zinc from the cupcake was explored. Among the various enzyme substrates used for the hydrolysis, the highest degree of hydrolysis was obtained for 1:25 enzyme substrate ratio for 120 min and 700 mg …

Antibiotic Resistance in the Bacterial Isolates of Bengaluru Lakes
Abstract: Increased urbanization in Bengaluru has resulted in excessive drainage of antibiotic-resistant bacteria into its pristine lakes via sewage and seepage. This pollution of the resistant bacteria is a direct result of the unregulated use and abuse of antibiotics which has only increased over the years and become a global health threat. Regarding this issue, we conducted a study to confirm the presence of antibiotic-resistant bacteria in Bengaluru lakes. For this, …

Heat induced changes in casein
Abstract: In current times, dairy sectors involve milk being always subjected to heat treatment; main examples are: high temperature-short time (72 ˚C × 15 sec) pasteurization, low temperature-long time pasteurization (65 ˚C × 30 min), ultra-high temperature sterilization (140 ˚C × 5 sec), thermization (65 ˚C × 15 sec), in-container sterilization (112 ˚C × 15 min). Calcium chelators are, however, capable of increasing the heat stability of milk. Milk is considered …

Supplementing Wheat Protein to Improve and Complement Its Nutritional Quality
Abstract: Protein concentrates from lobia seeds, soybean, hyacinth beans and milk (casein and whey) were prepared following isoelectric precipitation. The percent moisture/protein content of these concentrates was 5.01±0.03/84.81±2.19; 5.15±0.06/86.60±1.66; 5.11±0.03/83.28±1.42, 8.19±0.15/86.03±0.68 and10.21±0.04/77.5±0.68 respectively. Acidic and alkaline hydrolysis of these concentrates was carried out in steam under pressure conditions (121°C) at different time intervals (60, 120 and 180 min). Hydrolysis treatment in both the conditions for 180 min resulted into improved separation …
