Response of Cultivars and Picking Dates on Storability of Karonda (Carissa Carandas L.) Jelly
Abstract: Karonda jelly was prepared from cultivars viz ‘Pant Manohar’, ‘Pant Sudarshan’ and ‘Pant Suvarna’ at picking dates of 40, 60 and 80 days after fruit set. The shelf stability of the jelly samples were evaluated at ambient temperature for a period of nine months. The ‘Pant Suvarna’ jelly exhibited maximum moisture, total soluble solids (TSS), reducing sugar, non-reducing sugar, total sugar, non-enzymatic browning and pectin content. Among picking dates, the …

Maillard Browning: Pros and Cons in Dairy and Food Industries
Abstract: The Maillard reaction, also known as non-enzymatic browning reaction between reducing sugars and amino groups. This reaction is responsible for the formation of several compounds, called MRP (Maillard Reaction Products) for food products. The Maillard reaction produces undesirable effects during the processing and storage of different liquid foods such as milk or fruit juices whereas for other solid foods the changes are favorable (in the case of bread, breakfast cereals, …

Forward Osmosis Membrane Concentration Process of Anthocyanins from Pomegranate Fruit
Abstract: The production of concentrated pomegranate juice was investigated by using forward osmosis membrane concentration process. Suspended solids were completely removed in the clarification step, while soluble solids and organic acids were concentrated using forward osmosis membrane process. The processes was performed at ambient temperature (25 ± 2 °C) and non pressure driven process to produce a concentrated extract to a total soluble solids (TSS) content of 60ï‚° Brix from an …

Experimental Study to Improve the Quality of Dehydrated Button Mushrooms (Agaricus bisporus)
Abstract: Mushrooms are popular for their delicacy and flavour rather than food value. However, it is well established fact that they are excellent sources of minerals and vitamins such as B-complex and vitamin C. In addition, mushrooms contain 1.1–8.2% lipids, 4.0–8.1% carbohydrates and 3–32% fibers on dry weight basis. It contains about 90% moisture. The present investigation was undertaken to study the effect of 10 min dipping or vacuum infusion pretreatments …

A Study on Quality Changes in Stored Bottle Gourd (Lagenaria siceraria) Juice
Abstract: The present study was designed to evaluate physico-chemical changes in bottle gourd juice during storage. The fresh bottle gourds were procured from the agriculture farm of Haryana Agriculture University, Hisar, India. The bottle gourd juice was extracted and treated with citric acid and potassium metabisulphite. Extracted juice was filled in glass bottles and stored under refrigerated (4–7 °C) and room temperature (27 ± 2 °C) conditions for 15 days. Total …

Heat induced changes in casein
Abstract: In current times, dairy sectors involve milk being always subjected to heat treatment; main examples are: high temperature-short time (72 ˚C × 15 sec) pasteurization, low temperature-long time pasteurization (65 ˚C × 30 min), ultra-high temperature sterilization (140 ˚C × 5 sec), thermization (65 ˚C × 15 sec), in-container sterilization (112 ˚C × 15 min). Calcium chelators are, however, capable of increasing the heat stability of milk. Milk is considered …
