Abstract: Lactobacillus brevis, isolated from human feces was assessed for its in vitro cholesterol reduction ability. The effects of bile salts, inoculum size and contact time in simulated intestinal juice were studied. Central composite design model was utilised to determine the effects of interactions of significant variables on cholesterol reduction.
